Toasty Marshmallow S’mores Bars

So, I’ve been on a major baking kick lately, mostly consisting of key lime recipes. My parents have an orange grove next to their house, and there is a very high-yielding key lime tree in the grove. I have juiced over 60 key limes in the last few weeks, and therefore, had to test a bunch of new recipes to make use of the stuff. I have a bunch more, but my palate was getting a bit shrivel-y from all the tangy baked goods. Time to try something else I’ve had my eye on for a while. Toasty Marshmallow S’mores bars – SO easy and SO good! Only 5 ingredients and you will make a lot of people happy… if you share, that is. These are sinfully rich, so I recommend you do that. That, and I don’t want anyone having to make an ER visit on my account. Of course, this being the fourth day in a row I’ve sent baked goods to work with my husband, I’m hoping no one accuses me of sabotaging their health. ;-) But, honestly, who has ever heard of turning away baked goods at the office? I told my husband if they asked why I’ve been baking so much, just to tell them I had an emotion. It could be any old emotion… happy, sad, bored, mad. Doesn’t matter. I just wanna bake! And I need people to eat the stuff so I don’t!

Lately, I’ve been seeing s’mores this and s’mores that just about everywhere I look, mostly from other bloggers, but also in my cookbooks and magazines. I keep saying I’m gonna try recipe after recipe, but then key limes or birthdays or anniversaries get in the way of my s’mores plans. My kids absolutely love s’mores. What’s not to love?! Other than fire, that is the best part of camping for them. Well, that and sleeping in a camper. Lucky for us, my parents have a pop-up, and my MIL has an RV. So we get to have all the fun with none of the storage or maintenance inconvenience. It’s the best way to go! :-)

If you are a s’mores lover, here is just one more yummy recipe to add to your collection. But, be warned: these are very rich and very sweet, and also very easy.

*Recipe adapted from Betty Crocker

Ingredients:

1 pkg. Betty Crocker sugar cookie mix

1 1/4 cups graham cracker crumbs

2 sticks butter, melted

1 pkg. (approx. 2 cups) milk chocolate chips

4 cups marshmallows

Instructions:

Preheat oven to 375F. In a large bowl, stir together the cookie mix, graham cracker crumbs and melted butter. Once dough forms, press into an ungreased 13x9 pan. Bake 18-20 minutes or until slightly browned and set. Immediately sprinkle the chocolate chips on the warm crust.smore step 1 08-24-11 kitkWait 3-5 minutes then spread the chocolate evenly.smores step 3 08-24-11 kitkSprinkle marshmallows over chocolate layer and turn oven to broil.smores step 4 08-24-11 kitkBroil 5-7 inches away from heat for 20-30 seconds or until the tops of the marshmallows are lightly browned.Smores broiling 08-24-11 kitkCool for 10 minutes then cut. Spray your knife or spatula with cooking spray after each cut, so that the marshmallows don’t stick to your knife. It will be very gooey!smores finished 08-24-11 kitkServe warm. If they have cooled completely, heat in the microwave for 8-10 seconds to get it back to it’s gooey state.
